Can we wonder at the statement made by Dr. Eugene Lyman Fiske, Medical Director of the Life Extension Institute of New York City, some time ago that: “The Life Extension Institute in the course of its twelve years’ service to the public has examined 400,000 people without finding a single perfect specimen”? And that “Among 10,000 supposedly well people 41%,or 4,100 were found to have minor defects requiring hygienic correction or minor medical or surgical attention; 35%, or 3,500, were found to have moderate defects requiring medical supervision as well as hygienic correction; 9%, or 900, were found to have advanced physical impairments requiring immediate medical or surgical attention; 5%, or 500, were found with serious physical conditions requiring immediate or surgical attention. Is it at all surprising that 97 percent of the people of this nation suffer from some form of ill health, and that sickness costs this country over $3,700,000,000 annually; thus making the amount spent for sickness equal to that spent for public education? Could the present generation live, as did our sturdy forefathers, directly from the fields and gardens, supplying their tables with the natural foods rich in the vital elements, instead of depending so largely on the convenient and highly advertised foods contained in packages, the record of the nation’s health would be very different than it now appears. Not only would they gain benefit from the foods eaten, but in addition, would have the health gained through the exercise of cultivating those gardens.
We are what we eat. Again, let us reflect upon the cause of disease, remove the cause, and see how promptly nature responds by giving a rebound to health. Let us consider once more that we are made of what we eat, and that to the extent that nature’s laws are studied and obeyed, just to that degree shall we be privileged to enjoy health. The spiritual law given to Israel anciently was, Obey and live; disobey and be cut off. The laws controlling our physical being are equally inexorable. If we place our hand upon a hot stove we may be forgiven for the transgression but we are sure to suffer the penalty of a burn.While the foregoing is descriptive of the earlier efforts to correct adulteration of foods, the Government is still endeavoring to protect against such, but finds the problem still greater since the commercialers now make use of minerals largely which are still difficult to detect.
